This is why we have really crazy smart cooks who do things like fry turkeys and boil crawfish in pepper hot enough to kick start an 18 wheeler.

Just don't discount New Orleans dives, when looking for good food. What's a dive? I consider a dive a place where you may not get great service, the place is not new or a chain, and they probably have at least 3 daily plate lunch specials. These are always the best. When in doubt order a plate lunch!!
